Eggless Mango White Chocolate Tea Cake

Ingredients:

All-purpose flour (Maida) – 150g (1¼ cup)

Baking powder – 1 tsp

Baking soda – ¼ tsp

Soft butter or neutral oil – 60g (¼ cup)

Powdered sugar – 80g (⅓ cup) (adjust depending on mango sweetness)

Thick mango purée (fresh or canned) – 100g (scant ½ cup)

Yogurt – 60g (¼ cup)

Vanilla extract – 1 tsp

Chopped white chocolate – 50g (~⅓ cup)

Pinch of salt


Method:

1. Preheat oven to 170°C. Grease and line a loaf or round cake tin.

2. Sift flour, baking powder, baking soda, and salt.

3. Whisk butter/oil and sugar until creamy.

4. Add mango purée, yogurt, and vanilla. Mix well.

5. Fold in dry ingredients gently.

6. Fold in chopped white chocolate.

7. Pour into the tin and bake for 35–40 minutes.

8. Let cool, then dust with powdered sugar or drizzle with a thin mango glaze!
