Eggless Orange Cardamom Tea Cake

Ingredients:

All-purpose flour – 1 ¼ cups (160g)

Baking powder – 1 ½ tsp

Baking soda – ½ tsp

Salt – ¼ tsp

Sugar – ¾ cup (150g)

Fresh orange juice – ½ cup (120ml)

Orange zest – 1 tbsp

Oil – ⅓ cup (80ml)

Yogurt – ½ cup (120g)

Crushed cardamom pods – ½ tsp

Vanilla extract – ½ tsp


Method:

1. Preheat oven to 170°C. Grease a loaf pan.

2. In a bowl, sift flour, baking powder, baking soda, and salt.

3. In another bowl, whisk sugar, oil, yogurt, orange juice, orange zest, cardamom, and vanilla until smooth.

4. Fold dry ingredients into wet. Do not overmix.
